chocolate melting

I want to make truffles, lollipops, candies from chocolate. Problem is they melt. Is there a way to make chocolate treats so they don't melt so easily? I don't want to use candy chocolate. I want to use real chocolate. The candy stuff is full of bad ingredients.

Is there instruction on coating candies with chocolate, like See's candies. Have an interior with a solid coating.
